INSTRUCTIONS:
1). Combine white sugar, citric acid, hot water, lime juice, caffeine, and caramel coloring in a large heat resistant mixing bowl. 2). In a glass jar combine a high proof neutral spirit, orange oil, lemon oil, nutmeg oil, coriander oil, cinnamon oil, and neroli oil. Swizzle or mix quickly with a wire whisk.
3). Add 30 Drops (1.5 mLs) of 7x coca-cola flavor to the syrup.
4). Add 0.5 - 1 tsp (3 - 5 mLs) vanilla extract to the syrup.
5). To make a drink combine 2 oz (60 mLs) Coca-Cola Syrup with 10 oz (300 mLs) Soda Water.
This is the 1886 Pemberton Coke recipe.
He said that real coke tastes more artificial, more cokey, and less sweet. He also said they taste very similar. Again, this is the flavorlab recipe. Interesting.

They taste pretty close and this is a bit less sweet than coke. It's a bit more acidic but it tastes like a "cola".

FE Coca (Fluid Extract of Coca) 3 drams USP (10.5 mL)
Citric Acid 3 oz (85g)
Caffeine 1 oz (30 mL)
Sugar 30 #
Water 2.5 gal
Lime Juice 2 pints (473 mL)
Vanilla 1 oz (30 mL)
Caramel 1.5 oz or more to colour
I made 1/8 Original and re-ordered the ingredients to order of use:
Water 1.18L
Sugar 1.7 Kg
Caramel 5.5 mL
FE Coca 1.3 mL (not used)
Vanilla 3.75 mL
Caffeine 3.75 mL
Lime Juice 59.12 mL
Citric Acid 10.6g
Method:
Mix together all of the ingredients of the 7X Flavour.
Set this aside in a sealed bottle.
Heat the water sugar and caramel in a large pot.
Stirring continuously, just until sugar is dissolved.
Take off the heat and mix in vanilla, caffeine, lime juice and citric acid.
Stir to fully combine.
Add a measured amount of 7X flavouring to the sugar syrup.
Mix with carbonated water at a ratio of one part syrup and 5 parts water.
Flavour emulsion:
7.50 mL orange oil
7.00 mL lime oil
2.00 mL lemon oil
0.80 mL cassia oil
1.50 mL nutmeg oil
0.50 mL coriander oil
0.50 mL lavender oil
0.50 mL neroli oil
20g gum arabic
40 mL water
Method:
Measure out the oils into a small glass container.
In a high sides glass mixing jug, whisk together the gum arabic and the water.
While whisking the gum mixture at high speed, slowly dribble in the oils mixture.
Whisk at high speed for 15-20 minutes, or until oils and water emulsify.
No oils should be visible on the surface.
Cola Concentrate:
200 mL double strength caramel colouring
65 mL citric acid
100 mL water
22 mL vanilla extract
2 - 5 mL Kola extract depending on your caffeine tolerance
Flavour emulsion from above
Method:
Add the caramel colouring to a medium glass flask.
In another glass container stir the citric acid into the water and mix until clear.
Add the citric acid water to the caramel.
Mix in the Vanilla and the Kola extract.
Whisk in the flavour emulsion.
This is the cola concentrate, which will make 90L of cola.
The Cola Syrup:
800 mL water
1.4 kG sugar
27 - 32 mL cola concentrate depending on your taste
Method:
Dissolve the sugar in the water over low heat.
This will take a while, stir and be patient.
Continue stirring until the syrup is clear, remove from the heat and allow to cool to room temp.
Stir in the cola concentrate.
This cola syrup will make 14L of cola.
Mixing the cola
The cola is a 7:1 mix.
1 part cola syrup to 7 parts carbonated water.
You can mix by the glass, or in a corny keg.
1886: They say it's too sweet and doesn't taste like coke.
